Salmon

The Fourth of July calls for salmon with peas picked fresh from the garden, but getting home-grown peas to ripen in Vermont for this great occasion is a real challenge. Along with freshly dug tiny new potatoes, this is an annual treat.

2 1½-inch salmon steaks

1 tablespoon unsalted butter salt and pepper to taste

Parsley Butter (receipt follows)

Preheat the oven to 400 degrees F.

Place the steaks on a buttered baking dish, salt and pepper them lightly, and place a teaspoon of butter atop each one. Bake them for about 25 minutes in the preheated oven. If you prefer to broil the fish, preheat the broiler and place the steaks on a rack in the broiler pan. Watch them carefully, and do not overcook.

Serve hot from the oven with Parsley Butter.
